Low Spoons Meals

One of my go to meals that tick most of the boxes of my daily requirements as an AuteyAdher, Zebra, and anklosaur with all the usual bonus extras these conditions have even on their own, is a stir fry.


Except mine is the most basic of basics, as I really struggle to stand for long.


So I usually purchase a tray of skewers, that are marinated.


My favourite is just the honey soy, but I've used satay, Asian sauce, plum, or whatever flavour I feel like that shopping day.


I take the meat off of two of the skewers and cook it up, add one of those frozen vegetables stream packs, and then the cup rice.


Done.


Low spoons, low cost, and tastes pretty good.


I have also just used whatever frozen veg I have in the freezer. You can get specific stir fry veg or add noodles instead of rice.


I have a body that does not absorb vitamins and minerals in the usual way, so have to supplement a lot, and be very aware of what I'm consuming, so I have even had prep days with my support workers where I have made up my own ziplock bags of steamed, home grown veg.


So it is a very flexible meal that can be fine tuned to the individual, or can be made in bigger matches for families.


How would you add to or alter this one for your own tastes?

I also keep hospital grade sustagen in the cupboard. I mix it in coffee and take it after having a lactaid tablet and that counts as breakfast or lunch!
